I wanted to share one of our favorite lunches...lunches always seem to be the hardest to get creative with. Especially when you are trying to keep it healthy and tasty for a six year old. Alex will eat about anything...thank goodness.
Hummus Veggie Sandwiches
Carrot cut into matchsticks
Mixed green Salad
Goat Cheese, feta or mozzarella
Pita bread or tortillas for roll ups
Spread hummus on one side of pita and cream cheese on the other, stuff with the veggie and top with cheese of your choice. Serve cut up veggies with the hummus.
